This single-vineyard Cabernet is softening and mellowing, with flavors of cherry, mocha and oak that are picking up sweet, mushroomy, gamy notes. Carmel Valley is a small appellation in a warm part of inland Monterey County that specializes in Bordeaux red wines. It's drinking well now.
