Saint Cosme assembles this wine from seven different parcels and gives it a relatively short (2 week) maceration. The result is a wine of exceptional complexity and finesse, starting with delicate herb and violet aromas. Red plum and stone fruit flavors take hold of the midpalate, yet there's always an intriguing spice note in the background. Rich, yet fresh, with great length.
