Dry, crisp, nervy wine, based around bright acidity. It has a steely edge, a dry, mineral core and a strong bite of citrus. It's still a young wine, needing 2–3 years to soften. || Vendange Manuelle (hand harvesting) is a good way of sorting the best grapes in the vineyard.
