One of the best qualities of Gavi is that tight, mineral note of talc powder or crushed stone that holds it all together. La Meirana is exemplary in this regard making this crisp wine perfect for fresh spring asparagus or a local Piedmont speciality such as sformati, a blended vegetable flan.
