It's difficult to tame the harsh tannins of this variety, but the Ruby Hill winemaker did it. The result is a flavorful, firm-textured wine that's also complex in flavor and well-balanced overall. It's tempting to drink now with a dry-aged steak, but it will be best after 2020.
