A touch of pepper accentuates the fresh notion of wet stone and citrus on the nose. The palate is bone dry and has a fresh fizzing mousse that accentuates, stone, pepper and green citrus even more. The slightly austere, bone-dry style will come into its own with other pure restrained flavors—think subtle Japanese dishes. The finish is brisk and superclean.
