This bottling isn't perfect, but it shows the potential for exploring a less ripe style of Pinot Noir in the Paso Robles area. Snappy sagebrush aromas meet with olive, wet bay leaf, myrrh and plum skins on the nose. The palate is driven by pine-sap, with lots of eucalyptus and juniper as well as dark elderberry, and a hint of elderflower.
