Mostly Thistle fruit, with some Hyland also, this is a blend of lots aged in one stainless barrel, one Champagne barrel, and the rest neutral. The mix works well, crafting a well-defined wine with some chicken-stock flavors modulating strands of lime, citrus and apple. It finishes with light toast and impressive length.
