Thistle makes a spicy, herbal, earthy style of Pinot Noir, so don't look for sweet, ripe, jammy flavors. The fruit tastes like the tart, wild berries of the Northwest, and it's backed with tart acidity and chewy tannins. But the concentration, focus and detail of the wine elevate it, and it persists in the mouth far longer than you anticipate.
