It's all about acidity and long hangtime with this Chard. The acids come from chilly, foggy nights, the ripeness from long, warm, sunny days. What you get is oodles of bright, pure pineapple, Granny Smith apple, Meyer lemon and spicy clove flavor, with a touch of caramelized oak for richness.
