From a section of the vineyard planted to only one clone, Paige's is luscious and velvety, smoothly decadent in sanguine, tangy fruit. Full bodied and in balance, it suggests a wild note of mint or bay leaf, something savory as one would find in a cassoulet or beef stew, two things with which it would pair well.
