This is the workhorse grape of Champagne and some domestic sparklers. Very little is bottled as still wine in Oregon. It has Pinot Noir color with some similar aromas of cola and sassafras, but veers off into an earthier, almost musky direction all its own. The pretty cherry fruit calls out for duck or salmon.
